Creamy Mushroom Pasta
Ingredients
250g pasta (any type)
200g mushrooms (button, chestnut, or mixed), sliced
1 small onion, diced
2 garlic cloves, minced
1 tbsp butter
1 tbsp olive oil
200ml cooking cream
Salt & pepper (to taste)
Parmesan cheese (to taste)
Parsley (optional)
Instructions
Cook pasta according to package instructions.
Heat butter and olive oil in a pan over medium heat.
Add the onions and sauté until soft.
Add garlic and mushrooms. Cook until mushrooms are browned (3–4 minutes).
Pour in the cooking cream and simmer for 3 minutes until thickened.
Add salt, pepper, and Parmesan.
Toss in the drained cooked pasta and combine well.
Garnish with parsley and serve warm.
TIPS
Add chilli flakes for a spicy version. Use a mix of mushrooms for deeper flavour. Add spinach during the last minute of cooking for extra nutrition. Reserve a bit of pasta water if you want a looser sauce.
