For the potatoes:
400g baby potatoes, halved
2 tbsp olive oil
1 tsp garlic powder
Salt & pepper
For the salmon:
2 salmon fillets
3 tbsp melted butter
3 garlic cloves, minced
1 tsp paprika
Juice of ½ lemon
1 tbsp honey (optional, for caramelisation)
Salt & pepper
Fresh parsley, chopped (for garnish)


🍳 Instructions
1. Prep the potatoes
Preheat oven to 200°C (400°F).
Toss baby potatoes with olive oil, garlic powder, salt, and pepper.
Spread on a baking tray and roast for 15 minutes.
2. Make the garlic butter
Mix melted butter, minced garlic, paprika, lemon juice, honey, salt, and pepper in a small bowl.
3. Add the salmon
After 15 minutes, push potatoes to the sides of the tray.
Place salmon fillets in the centre.
Brush generously with garlic butter.
4. Bake
Return tray to the oven and bake for 10–12 minutes, or until salmon is flaky and potatoes are crispy.
5. Finish & serve
Drizzle the leftover garlic butter from the tray over the salmon, garnish with parsley, and serve hot.
